Recipe: Slow Cooked Venison in Apple Cider

Since the in-laws tend to send us venison, I find myself actually needing recipes. And it would be good if I remembered what I cooked that was good last time! This was pretty good--good enough that it goes in the favorite recipes spreadsheet. It ended up tasting a lot more like a beef pot roast than I was expecting--this is good, because I like beef pot roast, but also bad, because you want more of the venison-y flavor than that. Side note: I like knowing that when I eat venison, the deer were having a good life doing deer things until they were shot and killed pretty much instantly.
Slow Cooked Venison in Apple Cider
Original recipe source was BellaOnline, but I do have some modifications.
Ingredients:
Venison (called for roast, I used loin)
2 T. flour
2 T. butter
2 stalks celery, coarsely chopped
1/2 onion, quartered
3 large potatoes, peeled and chopped into 1" chunks
4 carrots, peeled and chopped into 1" chunks
1 1/2 c. apple cider
1 c. beef broth
1 tsp. thyme
1 tsp. salt
1 tsp. pepper
Put flour in a plastic bag. Put venison in bag and shake to coat with flour. Melt butter in skillet. Saute venison until slightly browned on both sides. Slice venison into serving-sized pieces and put in the slow cooker. Add celery, onion, potatoes, and carrots.
Take 2 Tbsp. flour from bag and mix with 2 Tbsp of beef broth until a smooth slurry. In the skillet, put in cider, broth, and seasoning. Whisk in flour/broth slurry. Heat (this will thicken slightly). Pour over other ingredients in the slow cooker.
Cover and cook on low for 8-10 hours. No peeking!
