Recipe: Thai Green Beans

This looks kind of gross, but it tastes surprisingly good. The crumbled tofu absorbs most of the flavor and sauce. Original recipe: Simply in Season. From the CSA: Cippolini onions, fresh Italian garlic, and green beans.
Thai Green Beans
Ingredients:
5-6 c. green beans, chopped into pieces
1/2 onion, minced.
2 Tbsp. fresh ginger root, peeled and minced
3+ cloves garlic, minced
3 Tbsp soy sauce

(these substitute for 2 Tbsp. Thai sweet chili sauce)
1 Tbsp. Sriracha (hot chili sauce)
1 Tbsp. fish sauce (omit to be vegetarian)
pinch of sugar

1 c. extra firm tofu, crumbled (about 1/2 pkg.)
Note: Start cooking the rice *after* everything is chopped/minced and before beginning to actually cook.
Steam or microwave green beans until lightly crunchy.
Heat 2 tsp. sesame oil over medium heat. Saute onion, ginger, and garlic until translucent, about 5-6 minutes.
Add to taste soy sauce, Thai sweet chili sauce or substitute.
Add crumbled tofu and cook 5 minutes. Add beans and stir around to coat. Simmer (or heat) for 5 more minutes. Serve over rice.
