Recipe: Spicy Baked True Yams
Jan. 22nd, 2008 06:09 pmOriginal recipe in Joy of Cooking. Slight variations from the original, only in methodology. I am pretty unsure whether the main ingredient I used was "true yams" or plain ole sweet potatoes--either way, 'twas delicious.
Preheat oven to 375 degrees.
Peel 2 lbs "true yams," rinse, and cut into 1" pieces.
Put the pieces in casserole dish.
Drizzle with about 2 Tbsp olive oil.
Sprinkle heavily with salt, fresh ground black pepper, and chili powder.
Bake, tossing about every 15 minutes, for 45 minutes.
Add 1/2 inch of water to the pan and bake until softened, about 15 minutes.
Eat plain or mash and put butter, salt, & pepper on top.
